Recipe: A Crispy Summertime Snack

It’s hard to believe, but summer has come at last. Even though the season will look very different this year – I doubt I’ll be taking any day trips to the beach or renting out a cottage to share with some friends – I can’t help but feel my spirits lift along with the longer-lasting sunshine.

Since being stuck at home, I’ve found myself snacking even more than usual; and what with it being summer, I’ve begun craving lighter (but nevertheless filling) fare. Not to mention that what with this new sedentary lifestyle, I’d prefer to avoid unnecessary calorie consumption where I can. I’m no diet fanatic – but I do consider it a win when I can manage to make something that both tastes good and is healthy to boot.

Because of all of this, it’s probably no surprise to hear my partner and I have been devouring these Baked Spinach Chips almost as quickly as I can make them. They’re the perfect substitute for your favourite potato chips (while being lighter and better for you)!

Salty & Sour Baked Spinach Chips

Ingredients

  • 1 cup of fresh spinach (larger leaves are preferable, but baby spinach is a manageable substitution if that’s all you have stocked in your kitchen)
  • A few drops of extra virgin olive oil
  • Salt and lemon/lime juice to taste (you won’t need a lot)

Directions

  1. Preheat oven to 350 degrees
  2. Mix spinach, olive oil, lemon/lime juice and salt together in a large bowl with hands until leaves are fully coated (try not to drench the leaves – a little goes a long way with this recipe, and it’ll take longer to cook them to a crisp if they’re soaking!)
  3. Lay the spinach leaves flat on a baking sheet lined with parchment paper, making sure the leaves aren’t overlapping
  4. Bake for 10 minutes or until spinach leaves are baked to crispy perfection
  5. Let stand for a minute to cool before removing from pan
  6. Enjoy! (and repeat as many times as wanted 😉)
