Recipe: The Best Chocolate Cupcakes (and Happy Birthday to Me!)

Guess what? Today is my birthday!! πŸ₯³πŸŽŠπŸŽˆ

To celebrate this oh-so-special-day I wanted to share with you all my favorite chocolate cupcake recipe! I by no means claim rights to this recipe, because it’s one of those ones that’s been in my family for so long I couldn’t tell you where it’s from. πŸ€·πŸ»β€β™€οΈ We always called it a “wacky cake” recipe, but I know it’s also referred to as a “Depression cake” – because it’s eggs- and dairy-free!

This is the exact cake my mother used to make for me growing up, so it’s got a special place in my heart. πŸ’— And, while I may be biased, I think it makes pretty great cupcakes. 🧁

Ingredients

  • 1Β½ cups of flour
  • 1 cup of sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • Β½ teaspoon of salt
  • 3 tablespoons of cocoa
  • 1 tablespoon of vinegar
  • 5 tablespoon of oil
  • 1 cup of warm water
  • 1 teaspoon of vanilla
  • Your choice of frosting!

Directions

  1. Preheat oven to 350℉.
  2. Grease muffin tin or line with baking cups.
  3. Combine and mix all dry ingredients in a large mixing bowl until evenly distributed.
  4. Add in all the liquid ingredients and stir until combined.
  5. Pour batter into cupcake liners, filling them Β½ to ΒΎ full.
  6. Bake 18 to 20 minutes.
  7. Cool completely before frosting. πŸ₯³
